Dolcemascolo artisanal Colomba requires patience, dedication and over three days of scrupulous processing. Simple, clear, and masterfully transformed ingredients in order to preserve their authentic flavors and their important nutritional properties. Cold leavening and slow fermentation preserve the purity of our dough but, once out of the oven, the Dolcemascolo Colomba is irresistible and it’s gone in a blink of an eye
Moreover, our dove cakes do not contain preservatives or additives because pleasure is even tastier when it is healthy. The healthier it is, the tastier it is.
MATTEO DOLCEMASCOLO

Born in Rome in 1989 After a long internship with renowned masters of Italian pastry, Matteo returned to his family workshop where he used his newly acquired experience to achieve new heights of quality.
Matteo is a pastry chef gifted with great sensitivity and an excellent technique. He passionately embraces the family tradition of big and little leavened goods, bakery products and savory pastries
A third-generation pastry chef, Matteo Dolcemascolo has already received important awards that qualify him as one of the brightest promises of Italian high pastry.
